This bold, high-proof single malt is the result of a nearly 10-year collaboration between Westward Whiskey and Portland’s beloved Ken’s Artisan Bakery. Made using Ken’s signature French sourdough levain—an active, mixed culture of wild yeast and bacteria—this whiskey ferments for up to 14 days, unlocking rich and complex flavors not found in traditional whiskey-making.
Now in its third release, this edition is the most expressive yet, bottled at a robust 125 proof. Expect notes of honey, mint, and ripe peach, alongside lavender, dark chocolate, and stewed stone fruit. It’s a whiskey that drinks like a 16-year-old rye, yet remains unmistakably Westward.
